Vegan Protein Balls Recipe

Ingredients
  

  • 1 packed cup pitted Medjool dates
  • 1/2 cup smooth almond butter
  • 1/4 cup vegan chocolate protein powder
  • 2 tbsp unsweetened cocoa powder
  • 2 to 3 tbsp unsweetened non-dairy milk
  • Pinch of fine sea salt (optional)

Method
 

  1. Process dates in a food processor for about 1 minute until they form a sticky paste, scraping the sides as needed.
  2. Add almond butter, protein powder, cocoa powder, and salt. Process 30 seconds, then drizzle in 2 tbsp milk and process another 30 to 45 seconds until a cohesive dough forms. Add the remaining milk only if needed.
  3. Scoop 1-tablespoon portions, roll into balls, and coat in cocoa, coconut, or crushed nuts if you like. Makes about 12 balls.

Notes

Chilling the balls for 20 minutes before storing helps them hold their shape even better. If your dates were on the dry side, you may need the full 3 tbsp of milk.
