Vegan Peach Cobbler Recipe

Ingredients
  

  • 6 ripe peaches, sliced
  • 1/3 cup (67 g) granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • 1/4 cup (50 g) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons (57 g) cold vegan butter, cut into small cubes
  • 1/2 cup (120 ml) unsweetened oat milk

Method
 

  1. Preheat oven to 375°F. Toss sliced peaches with 1/3 cup sugar, cornstarch, lemon juice, and vanilla. Transfer to an 8-inch square dish.
  2. Whisk flour, 1/4 cup sugar, baking powder, and salt.
  3. Cut cold butter into dry ingredients until coarse crumbs form. Stir in 1/2 cup oat milk until a shaggy dough comes together.
  4. Drop spoonfuls of dough over the filling, leaving gaps. Bake 40 to 45 minutes until golden and bubbly. Cool at least 10 minutes.
  5. Serve warm with vegan ice cream or coconut whipped cream.

Notes

Let the cobbler cool at least 10 minutes so the juices set before serving. If using frozen peaches, thaw and pat them dry first to avoid a watery filling.
