Ingredients
  

  • 1/2 cup vegan butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups rolled oats
  • 3/4 cup raisins

Method
 

  1. In a large bowl, beat vegan butter, brown sugar, and granulated sugar until fluffy, about 2 minutes; beat in flax egg and vanilla.
  2. In a separate bowl, whisk flour, baking soda, cinnamon, and salt; stir in rolled oats.
  3. Add dry ingredients to wet and stir until just combined; fold in raisins.
  4. Preheat oven to 350°F (175°C). Scoop rounded tablespoonfuls onto parchment-lined sheets, 2 inches apart; bake 12 minutes until edges are golden.
  5. Let cookies rest on the sheet for 5 minutes, then transfer to a wire rack to cool.

Notes

For extra plump raisins, soak them in warm water for 10 minutes and drain well before folding in. The cookies keep in an airtight container at room temperature for up to 5 days. Baked cookies freeze well for up to 3 months; thaw at room temp before serving.
