Method
- Heat oven to 350°F (175°C) and line two baking sheets with parchment.
- Beat the vegan butter and sugar until fluffy, about 2 minutes. Mix in the lemon zest, applesauce, lemon juice, and vanilla.
- Whisk flour, baking powder, baking soda, and salt in a separate bowl, then stir into the butter mixture just until combined.
- Cover and chill the dough for at least 30 minutes.
- Scoop tablespoon-sized portions, roll into balls, then coat thickly in powdered sugar. Place on the sheets a few inches apart.
- Bake for 10 to 12 minutes until edges are set and tops are crinkled. Rotate pans halfway.
- Let cookies rest on the sheet 5 minutes, then move to a wire rack to cool completely.
Notes
The prep time does not include the 30-minute dough chill. For the softest texture, avoid overbaking and let the cookies finish setting on the tray. If the powdered sugar coating loses its whiteness while baking, give the warm cookies a second light dusting straight from the sieve.
