Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsweetened oat milk
  • 1 tablespoon apple cider vinegar
  • 1/3 cup neutral oil
  • 2 teaspoons vanilla extract
  • 1/2 cup packed light brown sugar
  • 1/4 cup all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 3 tablespoons cold vegan butter

Method
 

  1. Preheat oven to 350°F (175°C). Grease an 8-inch square pan. Whisk together the 2 cups flour, granulated sugar, baking powder, baking soda, and salt in a large bowl.
  2. In a small bowl, stir brown sugar, 1/4 cup flour, and 1 teaspoon cinnamon. Cut in the cold vegan butter with fingertips until clumpy. Set aside.
  3. Mix oat milk and vinegar, let sit 5 minutes. Whisk the soured milk, oil, and vanilla into the dry ingredients until smooth. Pour batter into the pan.
  4. Sprinkle streusel evenly over the batter. Bake 40 to 45 minutes, until a toothpick inserted in the center comes out with moist crumbs. Cool in the pan on a wire rack for 15 minutes before slicing.

Notes

The cake is best the day it’s baked, but it holds up well. If your kitchen runs warm, chill the streusel for 10 minutes before topping the cake so the vegan butter stays firm and bakes into crisp crumbs.
