Method
- Whisk the flour, baking soda, and salt in a medium bowl.
- In a large bowl, stir the sugars, melted coconut oil, non-dairy milk, and vanilla until smooth.
- Add the dry ingredients to the wet in two parts, then fold in the chocolate chips.
- Cover the dough and chill for at least 30 minutes.
- Preheat the oven to 350°F (175°C). Scoop the dough onto lined baking sheets and bake for 11 to 13 minutes. Let the cookies cool on the sheet for 5 minutes, then transfer to a rack.
Notes
For the best chewy texture, chill the dough at least 30 minutes before baking. If you skip the chill, the cookies will spread into thin, crisp rounds instead of staying thick and soft.
