Vegan Blueberry Muffins Recipe

Ingredients
  

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) light brown sugar, packed
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ¾ cup (180ml) unsweetened soy milk
  • 1 tablespoon apple cider vinegar
  • ⅓ cup (80ml) neutral oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups (210g) fresh or frozen blueberries
  • 1 tablespoon coarse or turbinado sugar, optional

Method
 

  1. Preheat oven to 400°F (200°C) and line a 12-cup muffin tin. In a measuring cup, combine soy milk and vinegar; let sit 5 minutes. Whisk in oil, vanilla, and both sugars until mostly dissolved.
  2. In a large bowl, whisk flour, baking powder, baking soda, and salt for 30 seconds.
  3. Pour wet mixture into dry and stir with a spatula just until no dry flour remains, about 12 to 15 strokes. Batter will be thick and lumpy.
  4. Fold in blueberries with 3 to 4 gentle turns.
  5. Divide batter among liners, filling each three-quarters full. Sprinkle turbinado sugar on top. Bake 22 to 25 minutes until golden and a toothpick comes out clean.
  6. Let muffins cool in the pan 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

These muffins freeze well for up to 3 months. Wrap each muffin in plastic wrap and store in a zip-top bag. Thaw at room temperature or warm in the oven.
