- Preheat oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment. Mash bananas in a large bowl, then stir in oil, applesauce, vanilla, and sugars until glossy.
- In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
- Fold dry ingredients into the wet mixture just until combined. Add non-dairy milk one tablespoon at a time if the batter is too thick.
- Pour batter into the pan and smooth the top. Bake for 50 to 60 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then lift out and cool completely on a rack. Slice with a serrated knife and serve.
Notes
For the most banana-forward flavor, use bananas that are deeply speckled or even black. The loaf is even better the next day. If using frozen bananas, thaw them in a sieve so excess liquid drains away before mashing.
