Vegan Banana Bread Recipe

Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 tsp ground cinnamon
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 3 large very ripe bananas, mashed
  • 1/3 cup neutral vegetable oil
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 2 tbsp plain unsweetened non-dairy milk

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment. Mash bananas in a large bowl, then stir in oil, applesauce, vanilla, and sugars until glossy.
  2. In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
  3. Fold dry ingredients into the wet mixture just until combined. Add non-dairy milk one tablespoon at a time if the batter is too thick.
  4. Pour batter into the pan and smooth the top. Bake for 50 to 60 minutes until a toothpick comes out clean.
  5. Cool in the pan for 10 minutes, then lift out and cool completely on a rack. Slice with a serrated knife and serve.

Notes

For the most banana-forward flavor, use bananas that are deeply speckled or even black. The loaf is even better the next day. If using frozen bananas, thaw them in a sieve so excess liquid drains away before mashing.
