Veg Cheese Burger Recipe

Ingredients
  

  • 2 large potatoes (about 400g), boiled and mashed
  • 1 cup frozen mixed vegetables, thawed and patted dry
  • 1/4 cup breadcrumbs, plus extra for coating
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red chili flakes (optional)
  • 4 oz mozzarella cheese, cut into 4 cubes
  • 2 tbsp vegetable oil
  • 4 burger buns, split
  • Lettuce leaves, tomato slices, onion slices
  • 2 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tsp mustard

Method
 

  1. Mash the boiled potatoes in a bowl. Mix in the thawed vegetables, 1/4 cup breadcrumbs, garlic powder, salt, pepper, and chili flakes until the mixture holds together.
  2. Divide into 4 portions. Flatten each into a disc, place a cheese cube in the center, and seal the potato around it. Shape into 3/4-inch thick patties and coat lightly with extra breadcrumbs.
  3. Heat oil in a skillet over medium heat. Fry the patties for about 4 minutes per side until deep golden and the cheese is melted.
  4. Toast the buns in a dry pan or under a broiler for 1 to 2 minutes until the edges are lightly colored.
  5. Spread mayonnaise and ketchup on the bottom bun. Layer lettuce, tomato, onion, and the hot patty, then close with the top bun. Serve immediately.

Notes

If you don’t have frozen mixed vegetables, use any cooked leftover veggies, finely chopped. The patties can be shaped ahead and refrigerated for up to 24 hours before frying.
