Vanilla Poke Cake Recipe

Ingredients
  

  • 1 box (15.25 oz) vanilla cake mix
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup water
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup whole milk
  • 2 cups heavy cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch pan. Combine cake mix, eggs, oil, and water; beat until smooth. Pour into pan and bake 25 to 28 minutes until a toothpick comes out clean.
  2. While hot, poke holes all over the cake with a wooden spoon handle, spacing them about an inch apart.
  3. Whisk together sweetened condensed milk and whole milk; slowly pour over the warm cake. Let sit at room temp 30 minutes, then refrigerate at least 2 hours until cold.
  4. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form, about 3 to 4 minutes.
  5. Spread whipped cream over the chilled cake and refrigerate at least 1 more hour before slicing and serving.

Notes

Chilling time is not included in the prep or cook totals. You’ll need at least 3 hours of cold time before slicing, though overnight is better for the softest texture.
