Vanilla Chia Pudding Recipe

Ingredients
  

  • 1/4 cup chia seeds
  • 1 cup milk of choice
  • 1 to 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt (optional)

Method
 

  1. In a medium bowl, whisk together milk, maple syrup, vanilla extract, and salt until combined.
  2. Stir in the chia seeds vigorously for 1 minute. Let sit 5 to 10 minutes, then stir again to break up clumps. Cover and refrigerate for at least 2 hours or overnight until thickened.
  3. Give the pudding a stir, spoon into bowls or jars, and top with fresh berries, granola, or a drizzle of syrup. Serve cold.

Notes

The hands-on prep takes just 5 minutes, but the pudding needs at least 2 hours to chill and set (overnight is best). Stir well after chilling if any separation occurs.
