Ingredients
  

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 small green cabbage, cored and thinly shredded (about 8 cups)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) tomato sauce
  • 1 cup long-grain white rice, uncooked
  • 1⅓ cup beef broth
  • 1 tsp smoked paprika
  • 1 tsp salt, plus more to taste
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • Chopped fresh parsley, for garnish (optional)

Method
 

  1. Heat olive oil in a large deep skillet over medium-high. Cook onion 2 minutes, then add beef and brown, breaking it up, about 5 minutes. Stir in garlic and cook 30 seconds.
  2. Add cabbage in batches, season with salt, pepper, and paprika, and sauté until wilted and starting to soften, about 5 minutes.
  3. Stir in rice, diced tomatoes with juices, tomato sauce, and broth. Bring to a simmer.
  4. Reduce heat to low, cover, and simmer 20 minutes, stirring once halfway. Let stand covered 5 minutes off heat, then fluff and serve garnished with parsley.

Notes

If you prefer a looser sauce, stir in an extra ⅓ cup broth just before serving. The 5-minute rest off the heat is important; it lets the rice finish absorbing any remaining liquid and keeps the texture from being gummy.
