Ingredients

  • 14 oz can sweetened condensed milk
  • 2 cups heavy cream, cold
  • 2 tsp ube extract
  • ¼ cup ube halaya (purple yam jam)
  • 1 tsp vanilla extract
  • Pinch of fine sea salt

Method

  1. Beat the cold heavy cream on medium-high speed until it holds firm peaks, about 3 to 4 minutes.
  2. In a separate bowl, whisk the condensed milk, ube extract, ube halaya, vanilla, and salt into a smooth purple mixture.
  3. Fold a third of the whipped cream into the ube mixture, then fold that back into the remaining whipped cream until evenly purple with only a few faint streaks.
  4. Transfer the ube cream to a 9×5 inch loaf pan, smooth the top, and press plastic wrap directly onto the surface. Freeze at least 6 hours or overnight.
  5. Let the pan sit at room temperature for 5 minutes, then scoop and serve.

Notes

This ice cream needs the full 6 hours in the freezer to set properly, so plan for an overnight freeze if you can. If it has been frozen longer than a day, let it soften on the counter for a full 5 minutes before trying to scoop; no-churn ice cream sets harder than churned versions.
