Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup neutral oil
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Method
 

  1. Preheat oven to 350°F. Line an 8-inch round cake pan with parchment. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. Add buttermilk, oil, egg, and vanilla. Stir just until smooth, about 1 minute.
  3. Scrape batter into the pan and smooth the top. Bake 25 to 28 minutes, until a toothpick comes out with a few moist crumbs. Cool in the pan 10 minutes, then turn onto a rack to cool completely.
  4. For the frosting, beat butter until creamy. Add powdered sugar, vanilla, and milk. Beat on low to combine, then on high for 2 to 3 minutes until fluffy. Adjust with a little milk or sugar as needed.
  5. Once the cake is cool, spread the frosting over the top. Add sprinkles if you like, then slice and serve.

Notes

The unfrosted cake keeps well at room temperature for a day if wrapped tightly. Frost right before serving for the freshest look, or frost and refrigerate if making a day ahead.
