Tuscan Shrimp Pasta Recipe

Ingredients
  

  • 8 oz linguine
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 1/2 cup oil-packed sun-dried tomatoes, drained and chopped
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese, plus more for serving
  • 3 cups fresh baby spinach
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes, plus a pinch for shrimp
  • Salt and freshly ground black pepper

Method
 

  1. Bring a large pot of salted water to a boil. Add linguine and cook until al dente, about 8–10 minutes. Reserve 1/2 cup pasta water, then drain.
  2. Pat shrimp dry, season with salt, pepper, and a pinch of red pepper flakes. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Cook shrimp 2 minutes per side until pink. Transfer to a plate.
  3. Reduce heat to medium, add remaining 1 tbsp oil to the skillet. Cook garlic and sun-dried tomatoes 30 seconds. Add chicken broth, scraping up any brown bits. Stir in heavy cream, Italian seasoning, and red pepper flakes; simmer 2 minutes. Whisk in Parmesan, then add spinach and cook until wilted, about 1 minute.
  4. Return shrimp and drained pasta to skillet. Toss well, adding reserved pasta water a tablespoon at a time if needed. Serve immediately with extra Parmesan and black pepper.

Notes

For the best texture, use freshly grated Parmesan and serve right away; the sauce thickens as it cools. If reheating leftovers, loosen the sauce with a splash of milk or pasta water.
