Turkey Taco Skillet Recipe

Ingredients
  

  • 1 lb lean ground turkey (93/7)
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 1 bell pepper, diced
  • 3 garlic cloves, minced
  • 2 to 3 tbsp taco seasoning
  • 1 cup long-grain white rice
  • 1 (10‑oz) can diced tomatoes with green chiles, undrained
  • 1 ¼ cups low-sodium chicken broth
  • 1 (15‑oz) can black beans, drained and rinsed
  • ½ cup frozen corn
  • ¾ cup shredded Mexican-blend cheese
  • Kosher salt
  • Toppings: sour cream, avocado, cilantro, lime wedges

Method
 

  1. Heat oil in a 12‑inch skillet over medium‑high. Add turkey and ½ tsp salt, cook until browned, 5–6 min. Transfer to a plate.
  2. Reduce heat to medium. Sauté onion and bell pepper until softened, about 4 min. Add garlic, stir 30 sec.
  3. Add rice, undrained tomatoes, broth, and taco seasoning. Bring to a boil, cover, reduce heat to low, and simmer 18–20 min until rice is tender.
  4. Remove from heat. Fold in turkey, beans, and corn. Top with cheese, cover, and let sit 2 min to melt. Serve with cilantro, lime, sour cream, and avocado.

Notes

If the rice still has a firm bite after 20 minutes, add 2 tablespoons of broth and simmer, covered, for another 5 minutes. This skillet reheats well, so it is great for meal prep lunches.
