Turkey Taco Bowl Recipe

Ingredients
  

  • 1 lb ground turkey
  • 1 tbsp vegetable oil
  • ½ cup diced yellow onion
  • 2 garlic cloves, minced
  • 2 tbsp taco seasoning
  • ½ cup water
  • 1 cup canned black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 2 cups cooked white or brown rice
  • 1 cup shredded romaine lettuce
  • 1 cup diced tomato
  • ½ cup shredded cheddar or Monterey Jack cheese
  • 1 ripe avocado, diced
  • ½ cup salsa
  • ¼ cup sour cream

Method
 

  1. Heat oil in a large skillet over medium-high heat. Cook onion 2 minutes, then add turkey and brown 6 to 8 minutes until no pink remains.
  2. Stir in garlic and taco seasoning; cook 30 seconds. Add water, scrape up browned bits, and simmer 3 to 4 minutes until liquid reduces.
  3. Warm the black beans and corn in a small pan or microwave with a splash of water until steaming, about 2 minutes. Drain any excess water.
  4. Divide rice among four bowls. Top with turkey mixture, beans, corn, lettuce, tomato, cheese, avocado, salsa, and sour cream.

Notes

If you want to use freshly cooked rice, let it cool for 10 minutes before building the bowls. This stops the hot rice from wilting the lettuce too quickly. The turkey mixture tastes even better after sitting for a day, so leftovers make a great lunch.
