Turkey Stuffed Peppers Recipe

Ingredients
  

  • 4 large bell peppers, any color
  • 1 lb lean ground turkey
  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 cup cooked white or brown rice
  • 1 cup tomato sauce
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup shredded low-moisture mozzarella, divided
  • 1/4 cup grated Parmesan
  • Fresh parsley, chopped, for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Heat olive oil in a skillet over medium. Cook onion 4 minutes, add garlic for 30 seconds, then add turkey and cook 6-7 minutes until no longer pink. Season with oregano, salt, and pepper.
  2. Stir in rice, tomato sauce, 1/2 cup mozzarella, and all Parmesan. Cook 1-2 minutes over low heat until cheese melts. Taste and adjust seasoning.
  3. Cut tops off peppers and remove seeds. Trim bottoms flat if needed. Fill each pepper with filling, place upright in a baking dish, pour 1/2 cup water around them, and top with remaining mozzarella.
  4. Cover with foil and bake 25 minutes. Uncover and bake 10 minutes more until cheese is bubbly. Let rest 5 minutes, then plate, spoon pan juices over top, and garnish with parsley.

Notes

The 5-minute rest after baking helps the filling set and makes the peppers easier to lift out. If your peppers are on the smaller side, you may have a little leftover filling. Use it as a stuffing for zucchini or serve it in a bowl on its own.
