Turkey Meatball Subs Recipe

Ingredients
  

  • 1 lb ground turkey (93/7)
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan
  • 1 large egg
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 can (15 oz) crushed tomatoes
  • Pinch of sugar
  • 4 sub rolls
  • 4 slices mozzarella

Method
 

  1. Preheat oven to 425°F. Mix turkey, panko, Parmesan, egg, 2 minced garlic cloves, 1 tsp oregano, salt, and pepper. Roll into 16 meatballs and place on a parchment-lined sheet.
  2. Bake meatballs for 12 to 15 minutes until set and 155°F inside.
  3. Meanwhile, heat olive oil in a skillet over medium heat. Sauté remaining 2 garlic cloves 30 seconds, add crushed tomatoes, remaining 1 tsp oregano, sugar, and salt/pepper. Simmer 10 minutes.
  4. Broil rolls cut side up brushed with oil until lightly golden, 1 to 2 minutes.
  5. Add meatballs to the sauce, cover, and cook 5 minutes. Spoon 4 meatballs into each roll, top with cheese, and broil 1 minute until melted.

Notes

If the sauce looks too thick before adding the meatballs, loosen it with a tablespoon of water. The meatballs will release a little moisture as they simmer, so start with a sauce that clings to a spoon but still drips slightly. For extra-crispy bread, lightly butter the outsides of the rolls before toasting.
