Turkey Enchilada Casserole Recipe

Ingredients
  

  • 3 cups shredded cooked turkey
  • 12 corn tortillas (6-inch), cut into quarters
  • 2 cups red enchilada sauce
  • 2 cups shredded Mexican blend cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon salt

Method
 

  1. Preheat oven to 375°F. Mix turkey, black beans, green chiles, 1 cup enchilada sauce, cumin, garlic powder, and salt in a large bowl.
  2. Spread ½ cup sauce in greased 9x13-inch dish. Layer tortillas (about 6 per layer), half the turkey mixture, and ⅔ cup cheese. Repeat layers, ending with tortillas, remaining sauce, and last ⅔ cup cheese.
  3. Cover with foil and bake 20 minutes. Uncover and bake 10-15 minutes, until bubbly and golden.
  4. Rest 5 minutes, then slice and serve with sour cream, cilantro, and avocado.

Notes

If using dry leftover turkey, stir a splash of broth or extra sauce into the filling. Let the casserole rest at least 5 minutes after baking so the layers set and slicing is clean.
