Turkey Chili Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ¼ tsp cayenne pepper (optional)
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (28 oz) can crushed tomatoes
  • 1 cup low-sodium chicken broth
  • 1 tsp salt
  • Black pepper, to taste
  • Optional toppings: sour cream, shredded cheese, cilantro, lime wedges, tortilla chips

Method
 

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground turkey, salt, and a few grinds of pepper; cook, breaking the meat into small crumbles, until no longer pink, about 5 minutes. Add the onion and bell pepper and cook 3 to 4 minutes until softened. Stir in the garlic and cook 30 seconds.
  2. Add the chili powder, cumin, smoked paprika, oregano, and cayenne (if using). Cook, stirring constantly, for 1 minute until the spices darken slightly and smell toasty.
  3. Pour in the crushed tomatoes, chicken broth, and drained beans. Stir to combine, scraping up any browned bits from the bottom, and bring to a boil.
  4. Reduce the heat to medium-low, partially cover the pot, and simmer for 15 to 20 minutes, stirring occasionally, until the chili thickens. Taste and adjust salt and pepper.
  5. Ladle into bowls and top with sour cream, cheese, cilantro, lime, and tortilla chips if you like. Serve hot.

Notes

Leftovers taste even better the next day. Refrigerate up to 4 days or freeze in airtight containers for up to 3 months. For a thicker texture, mash a small portion of the beans before adding them to the pot.
