Turkey Breast Tenderloin Recipe

Ingredients
  

  • 1 lb turkey breast tenderloins (about 2 pieces)
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh rosemary
  • ½ cup low-sodium chicken broth
  • 1 tbsp lemon juice (optional)

Method
 

  1. Preheat oven to 400°F (200°C). Pat turkey dry and season with salt and pepper.
  2. Melt butter in a large oven-safe skillet over medium-high heat. Sear turkey for about 4 minutes per side until deeply golden.
  3. Transfer skillet to oven and roast 8 to 10 minutes, until internal temperature reaches 165°F (74°C). Move turkey to a plate and tent with foil; rest 5 minutes.
  4. While turkey rests, return skillet to medium heat. Sauté garlic 30 seconds, then add broth and scrape up browned bits. Simmer 2 to 3 minutes until slightly reduced. Off heat, stir in lemon juice.
  5. Slice turkey against the grain and spoon pan sauce over. Serve immediately.

Notes

Turkey tenderloins can vary in size; an instant-read thermometer is the best way to hit the perfect doneness. If you don’t have an oven-safe skillet, transfer the seared turkey to a baking dish for the oven step, but keep the skillet for making the sauce.
