Turkey Breast Cutlets Recipe

Ingredients
  

  • 1 lb turkey breast cutlets (about 4 cutlets, ¼-inch thick)
  • 2 tbsp all-purpose flour
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter, divided
  • 2 garlic cloves, minced
  • ¼ cup low-sodium chicken broth
  • 2 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped (optional)

Method
 

  1. Mix flour, salt, and pepper on a plate. Pat cutlets dry, then press both sides into flour to coat lightly; tap off excess.
  2. Heat oil in a large skillet over medium-high until shimmering. Add cutlets without crowding and cook until golden on the bottom, about 2–3 minutes. Flip and cook another 2–3 minutes, until firm and 160°F (71°C). Transfer to a plate.
  3. Lower heat to medium-low. Melt 1 tbsp butter, add garlic, and stir until fragrant, 30 seconds. Pour in broth and lemon juice, scrape up browned bits, and simmer until slightly reduced, 1–2 minutes.
  4. Return cutlets to the skillet, spoon sauce over them, and warm 30 seconds. Remove from heat, stir in remaining 1 tbsp butter, then plate and spoon sauce over. Garnish with parsley and serve immediately.

Notes

Let the cutlets rest for a minute after searing before adding to the sauce; this keeps the pan juices from watering things down. If your cutlets are thicker than ¼ inch, pound them gently between plastic wrap until even.
