Method
- Mix flour, salt, and pepper on a plate. Pat cutlets dry, then press both sides into flour to coat lightly; tap off excess.
- Heat oil in a large skillet over medium-high until shimmering. Add cutlets without crowding and cook until golden on the bottom, about 2–3 minutes. Flip and cook another 2–3 minutes, until firm and 160°F (71°C). Transfer to a plate.
- Lower heat to medium-low. Melt 1 tbsp butter, add garlic, and stir until fragrant, 30 seconds. Pour in broth and lemon juice, scrape up browned bits, and simmer until slightly reduced, 1–2 minutes.
- Return cutlets to the skillet, spoon sauce over them, and warm 30 seconds. Remove from heat, stir in remaining 1 tbsp butter, then plate and spoon sauce over. Garnish with parsley and serve immediately.
Notes
Let the cutlets rest for a minute after searing before adding to the sauce; this keeps the pan juices from watering things down. If your cutlets are thicker than ¼ inch, pound them gently between plastic wrap until even.
