- Combine 2 cups water, salt, sugar, peppercorns, bay leaves, garlic, and onion in a saucepan. Stir over medium heat until dissolved, about 4 minutes. Remove from heat, add remaining 2 cups cold water, and cool completely.
- Submerge turkey breast in the cooled brine, cover, and refrigerate 4 to 12 hours.
- Heat oven to 400°F (200°C). Remove turkey from brine, pat very dry, place on a rack in a roasting pan, rub with oil and season with pepper. Roast 55 to 65 minutes until internal temp reaches 160°F (71°C).
- Rest on a cutting board 10 minutes, then slice and serve.
Notes
Brining time is not included in the total time. Plan for at least 4 hours in the fridge, and up to 12. If the skin is not as crisp as you want, run the carved slices under the broiler for 30 seconds.
