Ingredients
  

  • 2 (5 oz) cans tuna, drained
  • 1 (15 oz) can cannellini beans, drained and rinsed
  • 1 medium shallot, minced
  • 2 celery stalks, diced small
  • ¼ cup chopped fresh flat-leaf parsley
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • ½ tsp Dijon mustard
  • ½ tsp fine sea salt
  • Freshly ground black pepper

Method
 

  1. Whisk olive oil, lemon juice, mustard, salt, and pepper until creamy.
  2. Combine beans, tuna, celery, shallot, and parsley in a large bowl.
  3. Pour dressing over the salad, toss gently, and serve right away.

Notes

The salad tastes best after a short rest of about 5 to 10 minutes on the counter so the flavors come together, but serve it soon after to keep the beans creamy and the celery crisp. If you refrigerate leftovers, bring them to room temperature and add a fresh lemon squeeze before eating.
