Ingredients

  • 1 cup quinoa
  • 2 (5 oz) cans tuna in water
  • 1 English cucumber
  • 1 cup cherry tomatoes
  • 1/2 cup finely diced red onion
  • 1/2 cup chopped fresh parsley
  • 1/4 cup extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper

Method

  1. Rinse quinoa, then boil in salted water for 12-15 minutes until tender. Drain and spread on a plate to cool.
  2. Whisk olive oil, lemon juice, Dijon, salt, and pepper in a large bowl to make the dressing.
  3. Add cooled quinoa, flaked tuna, cucumber, tomatoes, red onion, and parsley. Stir gently to combine.
  4. Toss and serve immediately, or cover and chill for later.

Notes

Cool the quinoa completely before mixing; warm grains can wilt the vegetables. The salad tastes even better after 30 minutes in the fridge once the dressing soaks into the quinoa.
