Tuna Poke Bowl Recipe

Ingredients
  

  • 1 lb sushi-grade ahi tuna, cut into 3/4-inch cubes
  • 1 1/2 cups uncooked sushi rice
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp sriracha, plus more for the mayo
  • 1/4 cup mayonnaise
  • 1 tsp honey
  • 1 cup diced cucumber
  • 1 avocado, cubed
  • 2 green onions, thinly sliced
  • 1 tbsp sesame seeds
  • Flaky sea salt, to taste

Method
 

  1. Rinse the rice, cook it according to package directions or in a rice cooker, and keep it warm.
  2. While the rice cooks, whisk together 3 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp rice vinegar, and 1 tsp sriracha. Add the cubed tuna and gently fold to coat. Let it marinate for 5 to 10 minutes.
  3. In a small bowl, stir together 1/4 cup mayonnaise, the additional 1 tsp sriracha, and 1 tsp honey until smooth.
  4. Divide the warm rice among bowls, top with marinated tuna, cucumber, avocado, and green onions. Sprinkle sesame seeds and a pinch of salt over the avocado, then drizzle with the spicy mayo. Serve immediately.

Notes

The prep time is hands-on work while the rice cooks; if your rice takes longer, the total will shift accordingly. Marinated tuna tastes best right away, so assemble the bowls as soon as the rice is ready. For a make-ahead option, cook the rice and whisk the spicy mayo up to a day ahead, then cube and marinate the tuna just before serving.
