Ingredients
  

  • 1 (5 oz) can water-packed tuna, drained
  • 2 tbsp mayonnaise
  • 1 tbsp finely diced celery
  • 1 tbsp minced red onion
  • 1 tsp sweet pickle relish (optional)
  • Pinch of salt and a few grinds of black pepper
  • 2 slices provolone or sharp cheddar
  • 1 large (10 to 12-inch) flour tortilla
  • 1 tsp unsalted butter

Method
 

  1. Flake the tuna with a fork, then stir in mayo, celery, red onion, relish, salt, and pepper until combined.
  2. Lay the tortilla flat. Place the cheese slices in the center, spoon the tuna salad over the cheese, fold in the sides, and roll up tightly.
  3. Melt the butter in a nonstick skillet over medium heat. Place the wrap seam-side down and cook 2 to 3 minutes per side, until golden and the cheese melts.
  4. Let the wrap rest 1 minute on a cutting board, slice on a diagonal, and serve hot.

Notes

For the crispiest exterior, make sure your skillet is fully heated before adding the butter and wrap. If the tuna salad is made ahead and chilled, give it a quick stir before assembling so no liquid pools.
