- Mix drained tuna, mayonnaise, celery, lemon juice, Dijon, salt, and pepper until combined but still chunky.
- Butter one side of each bread slice. On two unbuttered sides, layer tuna salad and cheese, then close with remaining bread, buttered side out.
- Heat a heavy skillet over medium heat. Cook sandwiches for 4 minutes until golden and crisp.
- Flip, press gently, and cook another 3 to 4 minutes until cheese melts and second side is crisp.
- Slice diagonally and serve immediately.
Notes
The tuna salad can be made a day ahead and chilled. Bring it close to room temperature before assembling so it does not cool the cheese while cooking. If your bread is very thick or dense, lower the heat slightly and add a minute to each side.
