Trash Can Nachos Recipe

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Servings: 6 servings

Ingredients

  • 12 oz sturdy tortilla chips
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 2 cups shredded Mexican blend cheese
  • 1 cup pico de gallo
  • 1 cup sour cream
  • 1 cup guacamole
  • Pickled jalapeños, to taste
  • Fresh cilantro and lime wedges

Method

  1. Brown the ground beef in a skillet over medium-high heat for about 6 minutes. Add taco seasoning and 1/4 cup water, stir, and cook 1 minute more.
  2. Line a clean trash can with a fresh food-safe bag, add chips, beef, and black beans. Close the bag, grip the can, and shake or roll to distribute the warm mix evenly.
  3. Dump the contents onto a large rimmed baking sheet, spread into one even layer, and top with the shredded cheese.
  4. Broil on high, 6 inches from the heat, for 3 to 4 minutes until the cheese melts and bubbles with a few golden spots.
  5. Spoon pico, sour cream, and guacamole over the top, scatter pickled jalapeños and cilantro, and serve immediately with lime wedges.

Notes

The whole point is a fun, messy pile, so don’t overthink the spreading. If your crowd is big, split the batch between two sheet pans so the cheese browns evenly. Serve with plenty of napkins and a cold drink.
