Traditional Coleslaw Recipe

Ingredients
  

  • 1 small head green cabbage (about 1 lb)
  • 1 large carrot
  • 1/2 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp granulated sugar
  • 1/2 tsp celery seed
  • 1/4 tsp fine sea salt
  • 1/4 tsp black pepper

Method
 

  1. In a large bowl, whisk together mayonnaise, vinegar, sugar, celery seed, salt, and pepper until smooth and the sugar dissolves.
  2. Shred the cabbage into thin ribbons, discarding the core. Shred the carrot on the large holes of a box grater. Add both to the bowl with the dressing.
  3. Toss everything together until every shred is evenly coated. Taste and add salt if needed. Cover and refrigerate for at least 30 minutes.
  4. Spoon the chilled coleslaw into a serving bowl, give it a final toss, and serve cold.

Notes

Letting the coleslaw rest in the fridge for a full hour or even overnight deepens the flavor and softens the cabbage just enough. If you’re in a hurry, it’s still good at 30 minutes, but day two is where it really shines.
