Tortellini Pasta Salad Recipe

Ingredients
  

  • 20 oz fresh cheese tortellini
  • 1 pint cherry tomatoes
  • 1 English cucumber
  • 1 bell pepper
  • 1/4 cup thinly sliced red onion
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh basil
  • 4 oz diced salami (optional)
  • 1/3 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp kosher salt
  • Freshly ground black pepper

Method
 

  1. Bring a large pot of generously salted water to a boil. Cook tortellini according to package directions until just tender, about 4 minutes. Drain and rinse under cold water until cool.
  2. In a large bowl, whisk the olive oil, vinegar, mustard, garlic, oregano, salt, and pepper until emulsified.
  3. Halve the tomatoes, dice the cucumber and bell pepper, and thinly slice the onion. If using, dice the salami. Toss the sliced onion with a small spoonful of the dressing to mellow it.
  4. Add the cooled tortellini, all vegetables, olives, salami, and basil into the dressing bowl. Fold gently until everything is coated.
  5. Toss once more, top with extra basil, and serve at room temperature or chilled.

Notes

Let the salad sit for 30 minutes before serving if you have the time; the dressing soaks into the pasta and vegetables beautifully. If it looks a little dry after chilling, add a drizzle of olive oil and a fresh squeeze of lemon before digging in.
