- Heat oven to 400°F. Brown ground beef and onion in a skillet over medium-high heat, 6 minutes, adding garlic in the last minute. Drain fat, stir in marinara, Italian seasoning, and red pepper flakes. Simmer 5 minutes.
- Mix ricotta, egg, salt, pepper, 1 cup mozzarella, and ¼ cup Parmesan in a bowl until smooth and thick.
- Spread half the meat sauce in a 9x13-inch dish, top with half the tortellini, then dollop half the ricotta mixture. Repeat layers, then top with remaining mozzarella and Parmesan.
- Bake uncovered 20 minutes until golden and bubbling. Let rest 5 minutes, then scoop and serve.
Notes
Letting the bake rest out of the oven for 5 minutes helps the layers set so they slice cleanly. If you prefer a crispier top, broil for the last 2 minutes and watch it carefully.
