Tomato Bisque Soup Recipe

Ingredients
  

  • 2 tbsp unsalted butter
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 (28 oz) can whole peeled tomatoes
  • 2 cups chicken or vegetable broth
  • 1 tsp granulated sugar
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ cup heavy cream
  • Fresh basil leaves, for garnish (optional)

Method
 

  1. Melt butter in a large pot over medium heat. Cook onion until softened, about 5 minutes, then add garlic and cook 1 minute.
  2. Add tomatoes with juices, broth, sugar, salt, and pepper. Simmer for 15 minutes, stirring occasionally.
  3. Remove from heat. Blend with an immersion blender until smooth, or carefully puree in batches in a stand blender.
  4. Return pot to low heat, stir in heavy cream, and warm for 2 minutes without boiling. Ladle into bowls and garnish with basil.

Notes

An immersion blender makes this soup easiest, but a stand blender works too. The bisque will thicken as it cools; thin it with a splash of broth when reheating.
