Tomato Basil Soup Recipe

Ingredients
  

  • 2 tbsp unsalted butter
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (28-oz) can crushed tomatoes
  • 2 cups vegetable broth
  • 1 tsp granulated sugar
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ cup heavy cream
  • ½ cup packed fresh basil leaves, plus extra for garnish

Method
 

  1. Melt butter in a large pot over medium heat. Add onion and cook 5 minutes until soft, then add garlic and cook 30 seconds.
  2. Stir in crushed tomatoes, broth, sugar, salt, and pepper. Bring to a boil, reduce heat, cover, and simmer 25 minutes.
  3. Remove from heat and blend with an immersion blender until smooth.
  4. Stir in cream and basil. Heat 2 minutes, then ladle into bowls and garnish with extra cream and basil.

Notes

If you prefer a soup with some texture, pulse briefly with an immersion blender rather than puréeing until completely smooth. The soup can be made a day ahead and reheated gently on the stovetop.
