Tofu Sushi Bowl Recipe

Ingredients
  

  • 14 oz block extra-firm tofu
  • 2 tbsp soy sauce or tamari
  • 2 tsp cornstarch
  • 1 tbsp neutral oil
  • 1 tsp toasted sesame oil
  • 2 cups cooked sushi rice
  • 2 tbsp unseasoned rice vinegar
  • 1 tsp sugar
  • Pinch of salt
  • 1 ripe avocado
  • ½ English cucumber
  • 1 medium carrot
  • 1 sheet nori
  • 2 tbsp mayonnaise
  • 1 to 2 tsp sriracha
  • ½ tsp lime juice
  • Toasted sesame seeds

Method
 

  1. Pat the tofu completely dry and cut into 1-inch cubes. Toss with 1 tbsp soy sauce, then with cornstarch.
  2. Heat neutral oil in a nonstick skillet over medium-high heat. Sear the tofu for 4 minutes per side, then drizzle with sesame oil in the last 30 seconds.
  3. Slice the avocado, cucumber, and carrot while the tofu cooks.
  4. Stir together mayonnaise, sriracha, and lime juice until smooth.
  5. Divide warm rice between bowls, season with remaining soy sauce, rice vinegar, sugar, and salt. Arrange tofu and vegetables over rice, top with nori strips, drizzle spicy mayo, and sprinkle sesame seeds.

Notes

If you start with cold leftover rice, warm it gently in the microwave with a damp paper towel so it steams and softens before seasoning. The spicy mayo can be made a day ahead and kept in the fridge.
