Ingredients

  • 1 block (14 oz) extra-firm tofu
  • 2 tbsp cornstarch
  • 2 tbsp neutral oil
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp sesame seeds
  • 1 sliced green onion

Method

  1. Drain and press the tofu under a heavy weight for 10 minutes, then cut into 4 steaks about 3/4 inch thick.
  2. Dredge each steak in the 2 tbsp cornstarch, shaking off excess. Sear in hot oil for 3 to 4 minutes per side until deeply golden, then transfer to a plate.
  3. In the same pan, combine the 3 tbsp soy sauce, 2 tbsp brown sugar, 1 tbsp rice vinegar, garlic, and ginger. Simmer, stirring, for about 2 minutes until syrupy.
  4. Return the tofu to the pan, spoon the glaze over the steaks, and cook 1 minute. Serve immediately with sesame seeds and green onion on top.

Notes

Pressing the tofu adds some inactive time; you can press it up to an hour ahead and keep it wrapped at room temperature. If the glaze thickens too much, thin it with a teaspoon of water right before adding the tofu back.
