Method
- Press the tofu for 10 to 15 minutes, then cut into 1/2-inch cubes.
- Heat 1 tbsp oil in a large skillet over medium-high heat. Sear the tofu cubes for 3 to 4 minutes per side until golden and crisp. Transfer to a plate.
- Add remaining 1 tbsp oil to the pan. Cook onion and carrot for 2 minutes, then add peas and garlic and cook 1 minute more.
- Add cold rice, soy sauce, rice vinegar, and sesame oil. Toss and let the rice sit in an even layer for 1 minute, then toss again, crisping for about 3 minutes total.
- Return the tofu and any juices to the pan along with red pepper flakes, toss gently, and serve topped with sliced green onions.
Notes
For the crispiest tofu, make sure the skillet is fully hot before adding the oil and do not crowd the cubes. If you need to double the recipe, cook the tofu in two batches so it sears instead of steaming.
