Tofu Chocolate Mousse Recipe

Ingredients
  

  • 12 oz silken tofu, drained
  • 8 oz dark chocolate (60-70% cacao), chopped
  • 4 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of fine sea salt

Method
 

  1. Melt the chocolate using a double boiler or microwave until smooth and glossy, then set aside to cool slightly.
  2. In a blender, combine the drained tofu, maple syrup, vanilla, and salt. Blend until completely smooth, scraping down the sides as needed. Add the melted chocolate and blend again until the mixture is uniform and looks like thick pudding.
  3. Divide the mousse among 4 ramekins or small cups. Tap each cup gently on the counter to pop any air bubbles. Refrigerate uncovered for at least 1 hour until set. Serve chilled with desired toppings.

Notes

The mousse can be made up to 24 hours ahead; it gets even silkier as it sits. If the chocolate feels too thick after blending, add 1 teaspoon of plant milk at a time until it reaches a pourable consistency.
