Tofu Alfredo Sauce Recipe

Ingredients
  

  • 12 oz silken tofu (1 block)
  • 2 cloves garlic
  • 3 tbsp nutritional yeast
  • 2 tbsp fresh lemon juice
  • 3/4 tsp fine sea salt
  • 1/4 cup unsweetened plain plant milk (or pasta water)
  • 1 tbsp extra virgin olive oil or vegan butter (optional)

Method
 

  1. Combine the tofu, garlic, nutritional yeast, lemon juice, salt, and plant milk in a blender. Blend on high until completely smooth, about 45 seconds, scraping down the sides as needed.
  2. Warm the olive oil in a large skillet over medium-low heat. Pour in the sauce and cook, stirring often, for 3 to 4 minutes until steaming hot and slightly thickened.
  3. Add hot cooked pasta and a splash of reserved pasta water. Toss with tongs for about 30 seconds, until every strand is glossy and coated.
  4. Divide into bowls, top with cracked black pepper and a sprinkle of nutritional yeast, and serve right away.

Notes

If the sauce thickens too much as it sits, stir in a little more warm pasta water or plant milk to loosen. For a richer flavor, use melted vegan butter in place of olive oil.
