- Whisk the eggs, milk, espresso, granulated sugar, 1 tsp vanilla, and salt in a shallow dish. Soak the bread for 2 to 3 minutes, turning once.
- Beat the mascarpone, powdered sugar, and ½ tsp vanilla on low speed for about 1 minute, until fluffy. Chill until needed.
- Melt 1 tbsp butter in a skillet over medium heat. Cook each slice for 3 to 4 minutes per side, adding butter as needed. Keep warm in a 200°F oven.
- Stack two slices per plate, top with mascarpone cream, and dust generously with cocoa. Serve right away.
Notes
The mascarpone cream can be made a day ahead and stored in the fridge. Let it sit at room temperature for 10 minutes before serving so it’s easy to spread.
