Method
- Heat the oil in a heavy skillet over medium heat. Add cumin seeds and hing; let them sizzle for 30 seconds.
- Add the tinda, turmeric, red chili, coriander, and salt. Stir well, cover, and cook on medium-low for 10 to 12 minutes until tender, stirring once halfway. Add a splash of water if dry.
- Uncover, add amchur powder, and sauté on medium heat for 2 minutes until any liquid evaporates and the tinda looks glossy.
- Transfer to a bowl, garnish with cilantro, and serve warm.
Notes
If you don't have amchur powder, a squeeze of lemon juice right before serving works just as well. The sabzi tastes even better after sitting for 5 minutes off heat.
