- Warm the oil over medium heat in a large pot. Cook the shallots 2 minutes, then add the garlic and ginger and cook 30 seconds.
- Pour in the broth, coconut milk, fish sauce, sugar, and red pepper flakes. Bring to a simmer and cook 5 minutes.
- Add the tilapia fillets and poach over low heat for 4 to 5 minutes, until opaque and flaky.
- Stir in the spinach and lime juice, then ladle into bowls and top with cilantro and lime wedges.
Notes
The fish will break into pieces as it poaches, which is part of the soup’s charm. If you prefer larger fillets, leave them whole and serve one per bowl. For extra richness, swirl in a spoonful of chili crisp at the table.
