Ingredients

  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup creamy peanut butter
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon cornstarch
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • About ⅓ cup thick jam or preserves (strawberry, raspberry, or grape)

Method

  1. Preheat oven to 350°F (180°C). Line two baking sheets. Cream butter, peanut butter, and sugars until fluffy, about 2 minutes. Beat in egg and vanilla. Mix flour, cornstarch, baking soda, and salt separately, then stir into wet mixture until just combined.
  2. Scoop dough into 1 ½ tablespoon balls, place 2 inches apart. Press a deep indent into the center of each with your thumb or a teaspoon.
  3. Spoon about ½ teaspoon of jam into each indent, filling just below the rim.
  4. Bake 10 to 12 minutes until edges are set and barely golden. Cool on sheet 5 minutes, then transfer to a rack to cool completely.

Notes

The jam will be extremely hot when the cookies first come out of the oven. Allow them to cool fully before stacking so the jam center can firm up.
