Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 1 ½ cups packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips

Method

  1. Cream the cold butter, brown sugar, and granulated sugar on medium-high until pale and fluffy, about 3 minutes.
  2. Beat in the eggs one at a time, then the vanilla, until the mixture is smooth and glossy.
  3. With the mixer on low, blend in the flour, baking soda, and salt in two additions until just combined.
  4. Fold in the chocolate chips by hand, cover, and refrigerate the dough for at least 1 hour.
  5. Preheat the oven to 350°F. Scoop chilled dough into 2-tablespoon mounds, bake for 12-14 minutes, then cool on the sheet 5 minutes before moving to a rack.

Notes

The 1-hour chill is hands-off time and not included in prep. You can chill the dough up to 24 hours for even thicker cookies and a more developed flavor. For soft centers, pull the cookies when the edges are set but the middle still looks pale and slightly underbaked.
