- Cream the cold butter, brown sugar, and granulated sugar on medium-high until pale and fluffy, about 3 minutes.
- Beat in the eggs one at a time, then the vanilla, until the mixture is smooth and glossy.
- With the mixer on low, blend in the flour, baking soda, and salt in two additions until just combined.
- Fold in the chocolate chips by hand, cover, and refrigerate the dough for at least 1 hour.
- Preheat the oven to 350°F. Scoop chilled dough into 2-tablespoon mounds, bake for 12-14 minutes, then cool on the sheet 5 minutes before moving to a rack.
Notes
The 1-hour chill is hands-off time and not included in prep. You can chill the dough up to 24 hours for even thicker cookies and a more developed flavor. For soft centers, pull the cookies when the edges are set but the middle still looks pale and slightly underbaked.
