Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup raw nuts (almonds, pecans, or walnuts), roughly chopped
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup unsweetened coconut flakes
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup melted coconut oil
  • 1/3 cup maple syrup
  • 1 large egg white
  • 1 teaspoon vanilla extract

Method

  1. Preheat oven to 300°F (150°C). Toss oats, nuts, seeds, coconut, salt, and cinnamon in a large bowl.
  2. In a separate bowl, whisk coconut oil, maple syrup, vanilla, and egg white until frothy.
  3. Pour wet mix over dry ingredients and toss until evenly coated.
  4. Spread mixture onto a parchment-lined baking sheet, press firmly into an even layer, and bake for 30 to 40 minutes without stirring, until deeply golden.
  5. Remove from oven and let cool completely on the pan, about 1 hour. Break into big clusters and store.

Notes

Letting the granola cool without moving it is the key to keeping the clusters intact. If you plan to add dried fruit, stir it in only after the granola has cooled for the best texture.
