Thai Quinoa Salad Recipe

Ingredients
  

  • 1 cup quinoa, rinsed
  • 1 ¼ cups water
  • 2 cups shredded red cabbage
  • 2 medium carrots, julienned or grated
  • 1 red bell pepper, thinly sliced
  • 1 cup sliced cucumber
  • 1 cup shelled edamame
  • ¼ cup chopped cilantro
  • 2 green onions, sliced
  • ¼ cup roasted peanuts, roughly chopped
  • 3 tbsp creamy peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tbsp maple syrup or honey
  • 1 to 2 tsp sriracha, to taste
  • 1 small garlic clove, grated
  • 1 tsp grated ginger

Method
 

  1. Combine the rinsed quinoa and water in a saucepan. Bring to a boil, then cover and simmer on low for 15 minutes. Remove from heat, let sit covered 5 minutes, and fluff with a fork.
  2. In a bowl, whisk the peanut butter, soy sauce, lime juice, rice vinegar, sesame oil, maple syrup, sriracha, garlic, and ginger. Add warm water a little at a time until the dressing is pourable.
  3. Shred the cabbage, julienne the carrots, slice the bell pepper and cucumber, chop the cilantro, and slice the green onions.
  4. In a large bowl, combine the quinoa, vegetables, edamame, cilantro, and green onions. Pour about two-thirds of the dressing over and toss well. Add more dressing to taste. Serve topped with peanuts and extra herbs.

Notes

Let the salad sit for 10 minutes after tossing so the dressing sinks into the quinoa and vegetables. Leftovers keep well; store undressed portions separately for the best crunch.
