Thai Chicken Marinade Recipe

Ingredients
  

  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp fish sauce
  • 2 tbsp lime juice (about 1 lime)
  • 2 tbsp brown sugar
  • 4 cloves garlic, minced
  • 1 tbsp soy sauce
  • 2 tsp grated fresh ginger (optional)
  • 1/4 cup chopped cilantro stems (plus extra leaves for serving)
  • 1 tbsp vegetable oil
  • 2 lbs boneless, skinless chicken thighs

Method
 

  1. Whisk coconut milk, fish sauce, lime juice, brown sugar, garlic, soy sauce, and ginger (if using) in a bowl until smooth. Stir in cilantro stems.
  2. Place chicken in a bag or dish, pour marinade over, and coat. Marinate at room temperature 30 minutes (or refrigerate up to 4 hours).
  3. Heat oil in a skillet over medium-high heat. Remove chicken from marinade (reserve liquid). Sear 5-6 minutes per side until charred and 165°F internal.
  4. Meanwhile, boil reserved marinade for 1 minute, then simmer. Rest chicken 5 minutes, slice, spoon warm sauce over, and top with cilantro leaves. Serve with lime.

Notes

Marinating time is not included in total time. If marinating longer than 30 minutes, keep the chicken in the fridge. For grilling, oil the grates and cook over medium-high direct heat.
