- Heat 1 tbsp oil in a large skillet over medium-high heat. Sear half the beef until browned, about 2 minutes per side, then transfer to a plate. Repeat with remaining oil and beef.
- Reduce heat to medium, add onion, and cook until soft, 3 to 4 minutes. Add curry paste and stir for 1 minute.
- Scoop the coconut cream from the top of the can into the pan. Cook for 2 minutes, then pour in the rest of the coconut milk, fish sauce, and brown sugar. Simmer 5 minutes.
- Add bell peppers and the seared beef with any juices. Simmer 3 to 4 minutes until peppers are tender-crisp. Season with salt if needed.
- Remove from heat, stir in basil until wilted. Serve over jasmine rice with lime wedges.
Notes
If you want a thicker sauce, simmer it an extra couple of minutes before adding the peppers and beef. For the best texture, don’t overcook the beef during the final simmer; it just needs to heat through.
