Thai Beef Curry Recipe

Ingredients
  

  • 1 lb beef sirloin, thinly sliced against the grain
  • 2 tbsp vegetable oil
  • 1 small onion, sliced into half-moons
  • 2 bell peppers, sliced
  • 3 tbsp Thai red curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1/2 cup fresh Thai basil leaves
  • Salt, to taste
  • Lime wedges, for serving (optional)

Method
 

  1. Heat 1 tbsp oil in a large skillet over medium-high heat. Sear half the beef until browned, about 2 minutes per side, then transfer to a plate. Repeat with remaining oil and beef.
  2. Reduce heat to medium, add onion, and cook until soft, 3 to 4 minutes. Add curry paste and stir for 1 minute.
  3. Scoop the coconut cream from the top of the can into the pan. Cook for 2 minutes, then pour in the rest of the coconut milk, fish sauce, and brown sugar. Simmer 5 minutes.
  4. Add bell peppers and the seared beef with any juices. Simmer 3 to 4 minutes until peppers are tender-crisp. Season with salt if needed.
  5. Remove from heat, stir in basil until wilted. Serve over jasmine rice with lime wedges.

Notes

If you want a thicker sauce, simmer it an extra couple of minutes before adding the peppers and beef. For the best texture, don’t overcook the beef during the final simmer; it just needs to heat through.
