Ingredients

  • 1 lb ground beef (80/20)
  • 1/2 onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 2 tbsp tomato paste
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • 4 slices thick-cut white bread (Texas toast loaf)
  • 3 tbsp unsalted butter, softened
  • 1/2 tsp garlic powder
  • 1 cup shredded cheddar or mozzarella (optional)
  • Chopped fresh parsley (optional)

Method

  1. In a large skillet over medium-high, cook the beef and onion until browned, 6 to 8 minutes. Add the garlic, cook 1 minute, then drain all but about 1 tablespoon of fat.
  2. Stir in the ketchup, tomato paste, brown sugar, Worcestershire, mustard, salt, and pepper. Bring to a simmer, then reduce the heat and cook until thick and glossy, 8 to 10 minutes.
  3. While the sauce simmers, heat the broiler with a rack 6 inches from the heat. Mix the softened butter with the garlic powder, spread it on both sides of each bread slice, and broil on a sheet pan 2 to 3 minutes per side until golden and crisp.
  4. Spoon the sloppy joe mixture over the toasts, top with cheese if using, and broil 1 to 2 minutes until melted. Scatter with parsley and serve immediately.

Notes

If you only want to assemble a few toasts at a time, keep the filling warm and toast the bread as you need it. The crisp bread is the whole point here, so it’s worth building each plate right before you eat.
